What the Kale

If you long for something crunchy but are avoiding the downsides of traditional potato chips, make your own baked kale chips. All you need for this recipe is one bunch of kale, preferably organic, olive oil and salt. Here are the details on the Baked Kale Chips recipe:

  1. Preheat oven to 350 degrees and line a non-insulated cookie sheet with parchment paper.
  2. Remove kale leaves from the stems and tear into bite size pieces. Wash thoroughly and dry with a salad spinner.
  3. Drizzle kale with 1 Tbsp. olive oil and sprinkle with salt to season.
  4. Bake 10 to 15 minutes, until the edges brown but don’t burn.

Not Your Mother’s Fries

Try sweet potato fries with a little zing. This one’s super easy. Start with frozen sweet potato fries. If you’re not going to be the driver and will have a free hand for dipping, blend up the smoky sweet yogurt dipping sauce (make it in a Ziploc bag and you can easily dispose of leftovers). See Sweet Potato Fries With Chipotle Yogurt for the instructions.
